This Week’s Recipe: Warm Tea Biscuits with Strawberry Jam
Soft, lightly crumbly biscuits meant for tearing open while still warm — generously filled with jam and eaten without apology.
Ingredients
For the Biscuits
2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
½ teaspoon salt and raisons, lots of raisons
½ cup cold butter, cubed
¾ cup milk
To Serve
Strawberry jam (or any berry preserve)
Butter or whipped cream, optional
Instructions
Mix the dry ingredients
In a bowl, whisk together flour, sugar, baking powder, raisons and salt.
Cut in the butter
Using your fingers or a pastry cutter, work butter into the flour until it resembles coarse crumbs.
Add the milk
Stir in milk just until a soft dough forms. Don’t overwork it.
Shape and bake
Pat dough gently and cut into rounds. Place on a baking sheet and bake at 400°F (205°C) for 12–15 minutes, until lightly golden.
Serve warm
Split open, add jam generously, and enjoy while the kettle’s still warm.
Pantry Tip
Jam keeps longer than fresh berries — which is why it always feels like a small luxury waiting patiently on the shelf.
