This Week’s Recipe: Salted Cod Fishcakes with Baked Beans

A humble, hearty classic with deep Atlantic roots

There’s something timeless about the pairing of crispy salted cod fishcakes and rich baked beans—simple ingredients, transformed into a deeply satisfying meal. This recipe brings together flaky salt cod, creamy potatoes, and a golden crust, served alongside slow-simmered beans in a lightly sweet tomato sauce.

🐟 Ingredients

For the Fishcakes:

  • 300g salted cod (boneless)

  • 2 cups mashed potatoes (cooled)

  • 1 small onion, finely chopped

  • 1 tbsp fresh parsley (optional)

  • 1 egg

  • Black pepper to taste

  • ½ cup flour (for dredging)

  • Butter or oil for frying

For the Baked Beans:

  • 2 tbsp tomato paste

  • 1 tbsp brown sugar or molasses

  • 1 tsp mustard

  • ½ onion, chopped

  • 1 clove garlic, minced

  • Salt and pepper to taste

  • ½ cup water

🧂 Step 1: Prepare the Salt Cod

  1. Rinse the salted cod under cold water.

  2. Soak it in fresh water for 12–24 hours, changing the water 2–3 times.

  3. Once soaked, simmer gently for 10 minutes, then drain and flake.

  2. Mix until well combined.

  3. Shape into small patties.

  4. Lightly dredge in flour.

🔥 Step 3: Fry to Golden Perfection

  1. Heat butter or oil in a skillet over medium heat.

  2. Fry fishcakes for 4–5 minutes per side, until crisp and golden.

  2. Add beans, tomato paste, sugar (or molasses), mustard, water, salt, and pepper.

  3. Simmer gently for 20–30 minutes, until thickened and rich.

Pantry Dispatch Note

This dish is a celebration of resourcefulness—salt cod preserved for long journeys, potatoes as a staple, and beans slow-cooked to stretch a meal. It’s comfort food with a story, perfect for sharing across generations.

Kitchen Story: Don’t Rush the Process

I once decided—quite confidently—that I would make salted cod fishcakes “just like they used to.”

Now, anyone who has ever worked with salted cod knows there is one very important step: soaking it.

Well… I sort of remembered that.

In my enthusiasm, I gave the cod what I generously believed was “a good rinse,” then got straight to work. Potatoes mashed, onions chopped, everything mixed together with great pride. I shaped the fishcakes, fried them up to a perfect golden crisp, and sat down feeling quite accomplished.

The first bite?

Let’s just say it tasted like I had accidentally invited the entire Atlantic Ocean over for dinner.

I tried to power through—because that’s what you do—but after a few heroic bites, I had to admit defeat. Even a generous helping of baked beans couldn’t save it.

Since then, I’ve never rushed the soaking process again. Some lessons in the kitchen are gentle… and some come with a very strong reminder.
