That’s when pantry cooking feels generous. A few spices, a little heat, and suddenly something ordinary feels like enough.

This Week’s Recipe: Hearty Chickpea Tomato Stew

A warm, gently spiced stew made from pantry staples — the kind of meal that simmers quietly while the kitchen fills with good smells.

Ingredients

  • 2 cans chickpeas, drained and rinsed

  • 1 can crushed or diced tomatoes

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon oil or butter

  • 1 teaspoon paprika

  • ½ teaspoon cumin (optional)

  • Pinch of chili flakes (optional)

  • Salt and black pepper, to taste

  • 1–1½ cups water or broth

To Finish (Optional but Recommended)

  • Plain yogurt, sour cream, or soft cheese (like ricotta)

  • Fresh herbs (parsley or cilantro)

  • Crusty bread for serving

Instructions

  1. Start the base
    Heat oil in a pot over medium heat. Add the onion and cook until soft and translucent.

  2. Add flavour
    Stir in garlic, paprika, cumin, and chili flakes. Cook for 30 seconds until fragrant.

  3. Build the stew
    Add chickpeas, tomatoes, and water or broth. Stir well.

  4. Simmer gently
    Bring to a low boil, then reduce heat and simmer uncovered for 20–30 minutes, until slightly thickened.

  5. Season and serve
    Season with salt and pepper. Ladle into bowls and top with a spoonful of yogurt or cheese and a sprinkle of herbs.

Pantry Tip

If the stew thickens too much, add a splash of water or tea — just enough to loosen it without thinning the flavour.

Serve hot with bread meant for dipping, tearing, and wiping the bowl clean.
