This Week’s Recipe: Fluffy Breakfast Pancakes with Berries

Soft, lightly golden pancakes meant to be stacked high, topped freely, and eaten slowly with coffee close at hand.

Ingredients

  • 1½ cups all-purpose flour

  • 1 tablespoon sugar

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 1¼ cups milk (or buttermilk if you have it)

  • 1 egg

  • 2 tablespoons melted butter or oil

  • ½ teaspoon vanilla (optional)

To Serve

  • Fresh berries (strawberries, blueberries, raspberries, blackberries)

  • Maple syrup or honey

  • Yogurt or whipped cream

  • Nuts (pecans or walnuts), optional

Instructions

  1. Mix the dry ingredients
    In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  2. Add the wet ingredients
    Stir in milk, egg, melted butter, and vanilla just until combined. The batter should be slightly lumpy — don’t overmix.

  3. Heat the pan
    Warm a skillet or griddle over medium heat and lightly grease it.

  4. Cook the pancakes
    Pour about ¼ cup batter per pancake. Cook until bubbles form on the surface and edges look set, then flip and cook until golden.

  5. Stack and serve
    Stack pancakes on a plate, top with berries, and serve with syrup, yogurt, or cream.

Pantry Tip

The first pancake is always a tester — consider it the cook’s reward.

Serve warm with coffee or tea, and let everyone build their plate their own way.
