This Week’s Recipe: Pantry Rice Bowls (Mix-and-Match Style)
These bowls are built from what’s on hand: cooked rice, a protein, something creamy, something crunchy, and something fresh. There’s no single “right” version — just a reliable method.
Ingredients (Base)
Cooked white rice (or any rice you have)
Cooked protein (choose one):
Grilled or pan-fried chicken
Roasted sweet potatoes
Tofu or leftover meat
Canned beans (black beans or similar), drained and warmed
One or two vegetables:
Broccoli, bell peppers, radishes, or whatever’s in the fridge
Optional toppings:
Hard-boiled eggs
Avocado slices
Pickled vegetables
Nuts or seeds
Creamy Pantry Sauce (What You See Drizzled)
¼ cup mayonnaise or yogurt
1 tablespoon lime or lemon juice
1 teaspoon mustard or hot sauce
Salt and pepper to taste
Splash of water or milk to thin
Stir until pourable.
Instructions
Warm the base
Heat the rice and beans. Keep them simple — salt is enough.Prepare the protein
Slice cooked chicken or roast sweet potatoes until caramelized. If using eggs, boil and halve them.Assemble the bowls
Spoon rice into bowls. Add beans, protein, and vegetables in sections — not mixed.Finish with sauce
Drizzle generously with the creamy sauce. Add nuts, seeds, or herbs if you have them.Eat while warm
These bowls are meant to be practical, filling, and forgiving.

If everything in the bowl is already cooked, dinner is just assembly — and that counts.
